Courgette, Pea and Garlic Soup

  1. 3 courgettes, sliced
  2. 4 garlic cloves
  3. 50g peas
  4. 700 ml vegetable stock
  5. Olive oil
  6. 1 onion, diced
  7. Salt and pepper
  8. Handful rocket leaves
  9. Mixed seeds for serving
  1. Preheat the oven to 200 C.
  2. Peel the garlic cloves, place on a baking tray in the centre of the oven and roast for 10-15 minutes.
  3. Meanwhile, gently cook the onion in olive oil until soft. Add the courgettes and peas and cook for a further 5 minutes.
  4. Add the vegetable stock, bring to the boil and simmer for 5 - 10 minutes until the vegetables are cooked through.
  5. Add the baked garlic and blend until smooth. Season to taste and serve with a handful of rocket on top and a sprinkle of mixed seeds.
