  1. 1 x onion, chopped
  2. 2 x garlic cloves, crushed
  3. 2 x courgette, chopped
  4. 1 x leek, chopped
  5. 1 x small potato, peeled and diced
  6. 3 x blocks of frozen spinach
  7. Salt
  8. Pepper
  9. 500ml vegetable stock
  10. Dried oregano
  11. Dried parsley
  12. 1 x rice cake
  13. Olive oil
  1. Slowly cook onion and garlic in olive oil.
  2. Add rest of the vegetables and slowly cook for a few minutes.
  3. And the stock, herbs and season to taste.
  4. Cook for 10 minutes or until the vegetables are cooked through.
  5. Crumble in the rice cake and then blend until super smooth.
