This is one of the quickest and easiest snacks – vegan and there’s plenty of good stuff in the nuts. I always have a jar to hand to enjoy with toast, rice cakes, crackers or anything else I fancy. This is also a great snack to have at work. You might get a few strange looks when you reach for your jar and peanut butter and rice cakes mid-afternoon rather than a chocolate bar, but you’ll certainly thank yourself for it.
There are obviously plenty of peanut butters available in the shops (although watch out for added ingredients – particularly sugar), but it is surprisingly easy and satisfying to make your own.
Simply take a bag of peanuts and blitz them in a powerful food processor until they form a peanut butter consistency. This might take a bit of time – the peanuts are likely to stay in a crumb-like consistency for a while – but just persist and eventually they will break down further into a butter. If you are having trouble achieving the right consistency, try adding a dribble of flavourless oil to help bring it together. Depending on the volume of your food processor, it is also worth doing this in small batches, or slowly adding more peanuts as you go and remember to scrape the sides of the food processor down periodically.
If you don’t have a food processor you good try using a seed / coffee grinder. I have a small grinder that makes light work of the peanuts.
Once made you have your butter, scrape it into a jar and store in the fridge until you scoff it all.
